On the podcast this week is Kelly Boyer, the founder and CEO of PALETA, farm-to-table meal delivery. 

In 2006, Founder and CEO Kelly Boyer started PALETA in her kitchen by delivering clients healthy twists on haute cuisine with ingredients sourced from local farms, cruelty-free ranches, and responsible fisheries. A survivor of late stage terminal cancer, Chef Kelly has made it her mission to introduce the world to a healthier lifestyle through the convenience of daily home meal delivery.

Home to Southern California's first certified green kitchen, PALETA has become a positive force from coast to coast and I'm SO excited for you guys to meet Kelly, hear her story, and learn all about PALETA! 

On this week's episode we chat all about Kelly's journey starting PALETA, their new Keto To The Kore Program, and the life-changing rare terminal ovarian cancer diagnosis at the age of 21 that changed the course of her life forever. We also talked all about what it takes to shift your perspective into joy after surviving cancer, living in joy, practicing kindness, and living a colorful life. Plus, Kelly shares her passion for health, wellness, and love for nurturing and improving the lives of others and SO much more!

So, where did PALETA begin?

Kelly's passion for healthful living is apparent in everything the she does. Her deep satisfaction and love for improving the lives of other's through introducing them to a healthier lifestyle via PALETA really started when she was diagnosed at the age of 21 with a rare advanced form of terminal ovarian cancer. With the love and support of family and friends, she beat it and it changed the course of her life forever. 

After graduating with honors from the Le Cordon Bleu culinary arts program, Kelly decided to apply her cooking techniques to create more healthful fare.  Friends started asking her to cook for them, then referred her to their friends, relatives, physicians, personal trainers, and her passion project became her life's calling. 

PALETA grew into a business that wanted to cast a wide net to really reach as many people as possible, to improve their lives through food.

Kelly and PALETA built the first LEED certified kitchen in the United States complete with recycling and composting programs, and an off-site greenhouse where they grow some of their own ingredients. 

Plus, Kelly creates all of the recipes and programs for PALETA - I mean, how cool is that?! 

Before PALETA, she graduated with honors from Northwestern University's masters program in Business and Organizational Development, was a Human Resources executive at a few large companies, but focused almost exclusively on the entrepreneurial aspects of each of those businesses. 

Learning to focus more on body and mind and overall health, enjoying the everyday experience of total body fitness, was a total game changer for Kelly.  At PALETA, they distinguish themselves by constantly raising the bar on their standards of ingredients and product profiles for all offerings to their clients.

Real wellness is well-rounded, it's mind, body and soul, and Kelly and I had such a wonderful conversation about the power of eating well and its connection to cultivating greater health. Changing the way that you eat changes the way you live and feel.

The truth is you can treat your outer layer, but if your inner body and self isn't healthy - well, it just won't work. During this week's episode Kelly shares with us the practices and techniques that she relies on to ensure that her inner mind and soul health is just as healthy as her body health. 

Kelly introduces us to PALETA'S new Keto To The Kore Program - the 2-phase keto cleanse. This new nutrition program drastically reduces and replaces carb consumption with fats & lean protein, which puts your body into a metabolic state called ketosis ("KETO"), which turns you into a fat burning machine. We also had a really wonderful conversation about kindness and changing the way we speak to ourselves. We really need more kindness in the world, and incorporating kindness, eco-consciousness, philanthropy, and giving back into her business has been really important to her. 

Kelly also shares the realities of what it takes to shift into joy after surviving cancer, and why it's important to live a colorful life.  

Kelly has said yes to herself, her life, and her dreams in a really big and profound way. She's a dynamo and her passion for health, wellness, and nurturing and improving the lives of others through her programs is at the heart of everything she does. I know that her story of perseverance, love, and passion will leave you feeling inspired.
